White Peony (a.k.a. Bai Mu Dan or Pai Mu Tan) is a light, traditional white tea that consists of young leaves with silvery buds. This one is organically grown with a generous amount of buds which produces pronounced sweet, gentle notes with peachy undertones. The taster will notice low astringency, weighty mouth-feel and a smooth, slightly sweet flavour with woody notes and a soft, roasted aroma. Try shorter steeps than you would with say, green teas, and take advantage of several enjoyable infusions! White Peony tea can be enjoyed on it's own, or pairs well with mildly flavoured sweets, such as shortbread; although in Hong Kong and amongst Cantonese, it is often served during a meal to support digestion, and therefore paired with any food.
