Butterfly Pea Flower tea (made from the Clitoria ternatea plant) has been enjoyed as a Southeast Asia caffeine-free herbal beverage for centuries. In Thailand it is a common beverage blended with lemongrass (see our Thai Butterfly Lemongrass blend).
What makes everyone so 'ga ga' over butterfly pea flower? Besides many health benefits, it is simply makes a stunning liquor. Infusing the dark blue flowers, creates a mesmerizing vibrant blue infusion. Add a few drops of citric acid, and it turns a lovely purple. Mix with different herbs to render different shades of blue or green.
Butterfly Pea Flower tea is abundant in potent antioxidants, and has been studied for numerous health benefits, including its ability to help protect the skin against premature aging, protect against certain cancers, reducing inflammation and pain associated with inflammation, eye health, brain health and generally its ability to support overall vitality.
When infused/ steeped with water, the flowers open and resemble a butterfly while infusing the water with a deep blue hue. A notable attribute of Butterfly Tea is the ability to change the color of the tea liqueur by adding lemon or lime juice (any acidic substance); add a couple drops of lemon/lime juice and watch the tea liqueur change from blue, to purple, to pink, you choose the ratio! You may also change the color of the tea liqueur by infusing/blending various substances such as tea (i.e. green tea) and herbs (i.e. hibiscus).
