This exceptional green tea from Zheijiang province in China is from the village of Jingning, located on the slopes of Mount Chimu. "Bai Ye" means white leaf. The cultivar, "Huiming", is named for the monk who built a temple in this area more than 1,100 years ago, surrounded by tea trees. An ancient plantation of tea trees can still be seen close to this temple today. The twisted, bright green leaves are covered with downy hairs, and produce a well-balanced brew, ideal for daily enjoyment. The clear, pale-green liquor gives off delicate notes of spring flowers and vegetal flavours akin to fiddleheads or asparagus.
